Grapes were hand–harvested and sorted three times, de–stemmed and gently pressed. Fermentation occurred in stainless steel tanks at 25–28ºC for 14 days. Maturation of Shiraz and Cinsault occurred for 18 months in French oak barrels and Mourvedre is unoaked.
De herder 2020 has a medium ruby colour. On the nose sour cherry is followed by black berry. Hints of wet gravel are followed by thyme, black pepper, vanilla and cigar box. On pallet the entry sweet with round velvety tannins. A youthful freshness shows fruit following through from the nose.
